Happy Thanksgiving!
This time of year, I become very nostalgic, and one of my favorite memories is lemon meringue pie! My Mother always made lemon meringue pie for the family meal. I never knew how she got the meringue so high on top. Because my birthday is within a day or two of Thanksgiving, it often got lost in the holiday hustle.
So, my Mother would make an extra one for me and tuck it away so I could bring it out for the family on my special day. Once I got into college, she’d prepare it for me to take when I went back to school. I loved sharing it to oohs and aahs with friends.
I’m not much of a pie baker, but lemon squares bring back the same nostalgic feelings for me. I love them so much, I included them in the Merit Bridges Cookbook, and named them Betty’s Lemon Squares with Chocolate Drizzle! Please enjoy the cookbook here as my gift!
I recently spoke at a book club meeting and the hostess surprised me by making the recipe and serving them to the members. I’m not sure if they paid more attention to me or the lemon squares, but it was a fun time. Let me know if you try them or send me your favorite Thanksgiving memory recipe!
